Kelp is the most edible type of algae and there are about 1500 species of them. Considered as one of the healthiest food on earth and has been used in most Asian countries for centuries as food and medicine. In the 1st century B.C., Kelp was used by the Greeks to feed their cattle.
This superfood can grow two feet a day and reach more than 300 feet. They have no flowers, roots, or stems but instead they have blades that look like leaves. Here’s something interesting, kelp has tiny ball shaped pods filled with gas and air in their blades that keep them upright to enable them to reach the sunlight! Kelp needs sunlight for photosynthesis and they love to be in nutrient-rich water where they grow best. They can actually tell the ocean’s condition like when they are straight up, it means there’s not much current, and if they’re diagonal, it’s probably not a good place to dive.
Among the varieties of brown algae, Kombu and Arame are the most well-known. Kombu kelp is known as the “king of seaweeds” which contains high amount of iodine, calcium, iron and dietary fiber. It is capable of protecting leukemia cells from the damaging effect of gamma rays and has an anti blood-clotting property. Have you tried a popular Japanese tea called Kombucha? Well, they are made from powdered kelp. Arame kelp on the other hand is a great source of plant based protein and high in trace minerals. It also contains an antioxidant known as lignans which neutralize free radicals in the body. Both of these kelps are rich in niacin and vitamin A. The concentration of minerals and vitamins in kelps is found in their tissue.
